This wine undergoes a 90-day skin contact maceration, contributing to its depth and complexity. The grapes are hand-harvested, de-stemmed, and fermented with indigenous yeasts. After fermentation, the wine continues skin contact for an additional 90 days before being manually pressed, lightly filtered, and bottled.
A pale amber hue and an aromatic profile of bruised apple, ripe peach, pear, dried flowers, and a hint of hazelnut shell. On the palate, it’s elegantly structured with vibrant acidity, balanced by a subtle complexity. The wine showcases a smooth texture and a refreshing finish with a lingering touch of salinity, making it a unique and intriguing expression of its terroir.

About theProducer
The #garagewine project began in 2015, in the town Toledo of Quintanar de la Orden, by the cousins Jesús Toledo and Julián Ajenjo, both with a history closely connected to viticulture and committed to rescuing native, local and minority varieties by producing micro-cuvees.
